So after my epic 2.5 pound weight gain over some fruit and beans I had to ask myself…”How Bad Do You Want It?” Pretty damn bad. I want the jiggle to take a hike and I am willing to go back onto the strict phase of the diet to make it happen.
Needless to say I was pretty ecstatic when I got on the scale this morning.
I guess abstaining from pizza and ice cream cake at Airheads yesterday worked like a charm. Happy Dance! I polished off the rest of the cottage cheese that was in the fridge before my daughter and I went for our 3.1 mile walk. I forgot to take a picture so this one from yesterday will have to fill in as the stunt double…yeah it does it’s own tricks.
After I worked out I decided to try something new. I had some leftover ham steak from Day 28 so I put it in the food processor with some mayo and pickle relish and made a ham salad. I took a 1/2 of a raw zucchini and sliced it into little disks, kind of like a round cracker and then topped each bite with some cheese. I was thinking to myself that this may have been better if put under the broiler for a few minutes, but I just decided to run with it the way it was.
I ate all but four of these little concoctions. Eating this was a big mistake. And I paid for it later. =( Let’s say I was ill for a little while.
My cousin invited us over for dinner at her place. She knew I was on the diet and made me something special. She was serving grilled chicken tacos with a special rub, cole slaw and roasted veggies. She had her hubby grill me a separate piece of chicken with Montreal Steak Seasoning instead of the rub (which had brown sugar in it). The cole slaw was sugar free and I LOVED it! I made her put what was left over of the slaw into a tupperware so I could take it home.
If anyone is looking for a great carb-free base to put meats on here’s the recipe…
- 12oz purchased coleslaw mix
- 1 cup coarsely chopped cilantro
- 3 tbs canola oil (any would do I guess)
- 3 tbs fresh lime juice
- 1/2 tsp coarse kosher salt
- 1/2 tsp ground black pepper
When I got home I actually had some more of the slaw. I couldn’t stop eating it!
